Guiltless Baked Spring Rolls


I had a craving for Spring Rolls today and decided to make my own! Instead of frying them, I baked them and they were delicious! Normal fried Spring Rolls are full of fat and calories, but these have only 1 gram of fat! These would be a great appetizer for my Guiltless Lemon Chicken!

Baked Spring Rolls

Servings: 6 (1 egg roll per serving)

Amount per serving: 120 calories—22g carbs- 1g fat- 5g protein

Ingredients:

  • 6 egg roll skins (I just Marjon)
  • 4 cups angel hair cole slaw (found by the bagged lettuce)
  • 2 tablespoons soy sauce
  • cooking spray

Directions

  1. Preheat the oven to 350 degrees
  2. On the stovetop, mix together the cole slaw and soy sauce until the coleslaw gets warm (it’ll break down and lose a little bit of volume)
  3. On a dry surface, place some coleslaw into an egg roll wrapper, roll up like an envelope, and seal with water. Like this: 
  4. Place onto a greased (cooking spray) baking sheet, spray the tops of the rolls with cooking spray and bake for 5 minutes. Flip and bake for another 5 minutes, then flip again and bake for another 2 minutes.
  5. Let cool for a little bit and enjoy!
