Healthy Chicken Nuggets


I’ve got a great recipe for kids (or kids at heart) today! Kids (and my husband) love chicken nuggets. I think it’s the bite sized aspect of them. They’re easy to handle, easy to dip, and delicious. Unfortunately, chicken nuggets are full of preservatives and sometimes aren’t even real chicken! I decided to come up with a healthy recipe that’s really easy to make!

Healthy Chicken Nuggets

Servings: 2

Amount per serving: 193 calories—18g carbs– 1g fat—26g protein—1g sugar

Ingredients:

  • 2 chicken breasts cut into bite seized pieces (4 oz breasts)
  • ¼ cup flour **the calorie count accounts for 2 tbs flour because only about half gets used—just an fyi
  • ¼ tsp onion salt
  • ¼ tsp garlic powder
  • 1 egg white
  • 1 cup panko crumbs **calorie count accounts for ½ cup because about half gets used
  • Cooking spray

Directions

  1. Preheat the oven to 350 degrees.
  2. Mix together the flour, garlic powder, and onion salt.
  3. Separate the flour, panko, and egg white into 3 different bowls
  4. Beat the egg white until soft peaks form
  5. One at a time, coat each piece of chicken in flour, then the egg white, then the panko and place on a greased (cooking spray) baking sheet. **TIP: make sure to coat well with egg white and panko so it really gets crunchy! Image
  6. When the nuggets are on the tray, lightly spray the tops of all of them with cooking spray.
  7. Bake for 5 minutes, flip each nugget over, and bake for another 5 minutes. Serve and enjoy!!

These chicken nuggets are great! My husband said he could eat a hundred of them! If you wanna make it spicy, try adding 1-2 teaspoons (depending on how spicy you want it) or so of cayenne pepper to the flour mixture!
