This morning I woke up earlier than usual so I decided to make use of that extra time and bake muffins! We had some bananas in the house and I’ve been craving banana bread so I figured, why not make banana muffins! I wanted to spice it up a little from just banana so I added some amazing ingredients to the top that really make the whole muffin work! The great thing about these muffins is that they’re healthy!
Honey Banana Muffins
Servings: 12 (1 muffin per serving)
Amount per serving: 113 calories—25g carbs—1g fat—2g protein—9g sugar
Ingredients:
- 4 medium bananas- mashed
- 1 cup Splenda or other granulated sucralose plus 1 teaspoon divided
- 1 egg—beaten
- 1/3 cup unsweetened applesauce
- 1 ½ cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 tablespoon honey
- 1 teaspoon cinnamon
Directions
- Preheat your oven to 350 degrees.
- In a bowl mixed the mashed bananas, 1 cup Splenda, egg, and apple sauce.

- In another bowl, mix the flour, baking powder, baking soda, and salt.
- Mix the dry ingredients into the wet ingredients and stir until smooth.
- Pour the muffin mix into a greased (non-stick cooking spray) muffin pan and bake for 15-18 minutes.
- After 10 minutes, drizzle the honey over all the muffins. Then sprinkle 1 teaspoon Splenda over all the muffins (1 teaspoon for all the muffins—not each muffin!) . Then sprinkle 1 teaspoon cinnamon over all the muffins.

- Bake for the remaining 5-8 minutes or until the edges are matte and browned.
- Enjoy!!
These muffins were great! Not too sweet, but not bland at all! They were really moist and the honey/cinnamon on top really makes this muffin amazing!
