Guiltless Lemon Chicken


I love Chinese food but I don’t get it all that often because it’s horrible for me. My favorite dish is Lemon Chicken! An order of Lemon Chicken is usually between 400 and 500 calories—NOT including the rice! I decided to make my own Lemon Chicken and it turned out awesome! It is so easy to make and only takes about 10 minutes!

Guiltless Lemon Chicken

Servings: 2

Amount per serving:  140 calories- 8g carbs- 2g fat- 25g protein- 1g sugar

Ingredients:

  • 2 chicken breasts (4 oz each)
  • salt and pepper to taste
  • ¼ cup lemon juice
  • ¼ cup Splenda or other granulated sucralose ingredient
  • 2-3 slices of lemon (can be omitted)
  • 1 tablespoon cornstarch dissolved in 2 tablespoons water

Directions

  1. In a saucepan or deep skillet, combine lemon juice, Splenda, and lemon and let it sit over medium-low heat. Image
  2. While that heats up, cut the chicken into bite sized pieces and put into a non-stick skillet over medium-high heat. Add the salt and pepper. Stir every so often until the chicken is cooked.
  3. When the sauce gets warmed and starts to simmer, turn off the heat and add the cornstarch and water mixture. Stir it until it looks like this: Image
  4. Plate the chicken over rice or your favorite vegetable, cover the chicken with your lemon sauce, and enjoy!

As a note: I wouldn’t recommend serving it with the lemon slices—those were more for pretty pictures :)

Directions for easy printing
