Carrie’s 5 ingredient Pie Crust!

Pie crusts are notorious for being hard to make, full of fat, and bipolar as far as results go. To be honest, making a pie crust is what has kept me from making pie. After a lot of searching, I found a recipe for a low calorie pie crust with a special ingredient: cottage cheese! I made it once and, while it was a good crust, I wanted to add something to it. One ingredient made a big difference! So today, I have a recipe for a delicious and easy to make crust that will make all your pie-making dreams a reality!

Carrie’s 5 Ingredient Pie Crust (adapted from this recipe)

Servings: 8

Amount per serving: 96 calories- 12g carbs- 5g fat- 3g protein–0g sugar

Ingredients:

  • 1 c flour
  • 1/3 c 2% cottage cheese
  • 3 tbs unsalted butter
  • ¼ teaspoon salt
  • 2 tbs Splenda

Directions:

  1. Preheat the oven to 475 degrees
  2. In a medium bowl, combine flour and salt.
  3. Using a fork, cut the butter into the flour mixture until it looks like coarse flour.Image
  4. Mix in the cottage cheese (it will not look like dough! It will look like chunky flour. That’s ok!) Image
  5. Using wax paper (I used plastic wrap) knead out the mix until it turns doughy (it will turn to dough as it is pressed together).Image
  6. Put the mixture into a greased (non stick cooking spray) 9” pie dish and press the dough around until it is molded into a pie crust shape.
  7. Sprinkle the Splenda on the top of the dough. Image
  8. Put in the oven for 8-10 minutes or until the edges turn brown. If it’s bubbly, don’t worry! The bubbles will settle.
  9. Fill and enjoy!

his pie crust is great! If you wanted, you could leave out the Splenda and it would be delicious with a quiche or something of that nature! I may try that for an upcoming recipe!
